Beef Wellington
There is something very special about a Beef Wellington, and it is a great addition for over the Christmas period. Whether you fancied a change from your usual Christmas meat, or having a decadent meal on Boxing Day then a Beef Wellington is sure to tick those boxes. It is perfect served with Dauphinoise Potatoes and leafy green vegetables.
The whole beef fillet is the right cut for this recipe (make sure you just use the centre cut to ensure it cooks evenly). The fillet tail and other off-cuts make a great Stroganoff!
